I came across this easy recipe for drop biscuits the other day, so I thought I’d share. These are great covered with stew or smeared with butter and strawberry jelly (or whatever flavor you like).
2 cups flour
1 Tablespoon baking powder
2 teaspoons sugar
1/2 teaspoon cream of tartar
Lightly mix above, then add:
1 cup milk
1/2 cup light olive oil or melted butter
Mix all ingredients until just combined. Do not over mix. Drop biscuits by the spoonful on to a lightly greased cookie sheet.
Bake in a 450 (F) degree oven for 10-12 minutes or until golden brown. Yield: 10-12 biscuits depending on size.
Variation: add a teaspoon of your favorite herbs or 1/4 cup of cheese or both to the batter, then bake.
