I decided to make a nice bison roast in the crock pot this morning. Of course, I needed some veggies to throw in the pot, so I wandered out to the garden to pull a few carrots. Even when the rest of the garden is done for the season, the carrots seem to hang on. Last year I was still digging them in December. As long as they’re covered, they seem to get sweeter as the weather cools. The first couple I pulled were small, but looked fine…then I found Super Carrot! This has to be the biggest carrot I’ve seen, let alone grown. When I began to slice it up for the roast, the sweet smell just permeated the kitchen…and was it juicy. Can’t wait for dinner!
